Celebrity Chef Cooks at Kittay House

Chef Neff at Kittay HouseHe’s been on Oprah and the Food Network; his recipes have appeared in Gourmet and Food & Wine.  On August 9, Chef Cary Neff, came to Kittay House Senior Apartments to cook one of his signature healthy and delicious meals for the tenants.

Nutritious foods can be exciting, flavorful and delicious,” explained Chef Neff as he prepared three dishes with readily available ingredients such as herbs, spices, fruits, and vegetables that provided a rich flavor along with optimal nutrition.

 

Classically trained in French cooking, as his career progressed, Chef Neff gravitated to healthier cooking.  He soon became known for transforming the nature of spa food from “low fat” to “full flavor,” in stints at Miraval Life in Balance Resort and Spa in Arizona, and at La Costa Resort and Spa in California.  Now as Vice President of Culinary for Morrison Management Specialists, he is responsible for redefining the food experience for senior living communities across the county, including at Kittay.

During his Kittay demonstration, Chef Neff focused on seasonal vegetables.  His tomato/mozzarella salad with balsamic reduction showcased seasonal bounty.  His corn chowder used fresh corn in the stock as a thickening agent instead of a roux, and instead of salt, it was flavored with herbs.  He also prepared a healthy and delicious chicken dish and a light and not too sweet chocolate cake.

I took one of the vegetable recipe handouts for my daughter. I think even my grandchildren, who avoid anything green, would like this!” said one Kittay tenant.

 

Later, the chef spoke with a group of tenants and asked for feedback on the recent changes in the quality and taste of the dining room meals at Kittay.  The response was overwhelmingly positive, especially when the topic turned to breakfast – which is now provided to tenants at no additional cost.

I have always loved a big breakfast and I was quite happy when Kittay  started to offer it.  In fact, all the meals are terrific,” a current tenant remarked.
